Chicken Sukka Recipe
Prepare flavourful Mangalorean-style chicken sukka using Emunah Chicken Sukka Masala and a handful of everyday ingredients.
Ingredients
- 1 kg chicken, cleaned
- 2 tablespoons Emunah Chicken Sukka Masala
- 2 onions, finely chopped
- 3 green chillies, slit
- 1 tomato, chopped
- 2 tablespoons ginger-garlic paste
- 1½ cups grated coconut
- 2 tablespoons ghee or coconut oil
- Curry leaves
- A small piece of tamarind or 1 teaspoon tamarind pulp
- Salt to taste
- Fresh coriander leaves for garnish
Method
- Heat the ghee or coconut oil in a pan.
- Add the chopped onions, green chillies, curry leaves and ginger-garlic paste. Sauté until the onions turn golden and the mixture becomes aromatic.
- Add the chopped tomato and cook until soft.
- Add the chicken pieces and mix well.
- Add Emunah Chicken Sukka Masala, salt and tamarind. Mix until the chicken is evenly coated.
- Cover and cook until the chicken is tender. The chicken will release moisture as it cooks, so additional water may not be necessary. Check occasionally and add a little water if needed to prevent sticking.
- Add the grated coconut once the chicken is cooked.
- Cook uncovered over medium heat, stirring occasionally, until the mixture becomes relatively dry and the masala coats the chicken well.
- Garnish with fresh coriander leaves and serve hot.
